Abstract: 

Purpose: Food security is a critical global challenge that is influenced by research and innovation in the field. Therefore, the objective of this study is to analyze the scientific output of developing countries in food security and examine its relationship with patents and Gross Domestic Product (GDP).Methodology: This applied research utilized the Scientometric approach. A total of 8,416 papers published between 1992-2023 in the field of food security by developing countries were included in the study using citation databases from Clarivate Analytics. Additionally, patent registrations from the WIPO database and GDP data from the World Bank were analyzed. Information was collected through note-taking, and the data was analyzed using Pearson's correlation coefficient.Findings: The findings reveal an upward trend in the publication and citation of scientific outputs related to food security in developing countries. China has higher numbers of papers, patents, GDP, and food production index compared to Iran, Japan, and South Korea. There is also a positive correlation observed between population and the number of papers, gross production and the number of papers, food production and the number of published papers, as well as the number of patents and papers citing scientific outputs of countries.Conclusion: These results highlight the significant relationship between increasing scientific output, GDP, the number of patents, and food security. Greater emphasis on food security contributes to enhanced scientific output, GDP, and innovation. Similarly, increasing scientific output, GDP, and innovation positively impact food security in countries.Value: This study emphasizes the importance of scientific outputs in driving technological advancements, innovations, and ultimately, ensuring food security in developing countries.

Abstract: 

The amount of anthoncyanin content and methods of color recovery from saffron petals were investigated. Results indicated that total anthocyanin of saffron petal was 6.87mg/gr on dry basis which is considerable in comparison with other sources. The most effective system for extraction of color was achieved by using 0.1 N Hcl as solvent with extraction time of 2 min. This natural color can be used in some acidic foods and beverages (pH<4.5) as red color.

Abstract: 

Today, many different methods are applied for the correct use of foods and to prevent their deterioration. Ensuring healthy conditions for people in food consumption and consumption of healthy foods is very important for human welfare. In this study, food spoilage, the factors that cause food spoilage, its effects on a global basis, food transport systems (cold chain) and measures that prevent or delay food spoilage are discussed.

Abstract: 

Purpose: The white mulberry tree (Morusalba) having a low water requirement, is native to Iran. Mulberry leaf extract is a rich chlorophyll source, and natural source of antioxidants and coloring pigments. White mulberry leaf extract was studied in terms of color production ability and antioxidant properties. Research method: The extracts of mulberry leaves were extracted by pure solvents of methanol, acetone, ethanol and 96% and 80% ethanol. Color extraction was investigated at beginning, middle and end of the production season. Antioxidant capacity, phenolic compounds, ferric reducing power and color stability were evaluated. Findings: 80% ethanol had a higher extraction rate and was cost-effective. In April and May, more total chlorophyll and carotenoid were extracted than in June. To determine the optimized antioxidant capacity, 100% ethanol solvent, sample to solvent ratio of 1 to 10, and microwave power of 500-watt were used. The leaves phenolic compounds extracted were highest in April (24.01 μg/ml) and lowest in June (19.13 μg/ml). The ferric reducing power was higher in the first samples of the season. Color stability decreased with pH from 6 to 3 and temperature increasing from laboratory temperature to 90°C and receiving light. Research limitations: The extracted color was not investigated in food products. Originality/Value: Chlorophyll, carotenoids, phenolic compounds and ferric reducing power were higher in the leaves at the beginning of the season. Color extraction from leaves harvested in April with 80% ethanol solvent had a higher value while maintaining pH and storage at room temperature in the dark.

Abstract: 

Background. In the recent day, there has been an exponential growth in the usage of clear aligners for orthodontic treatment. As with any removable appliance, the compliance of patients to remove it during ingestion of food is, at times, poor. Thus, the stability of the clear aligner to be “, clear”,becomes questionable. This in-vitro study examined how the clear aligners changed colour on exposure to various indigenous food products used in everyday life. Methods. Aligners from 5 different companies (K Line, Clearbite Aligners, The Aligner Company, iAligners and MaxDent CA Digital) were exposed for 12 hours and 24 hours to various indigenous substances (tea, green tea, coffee, turmeric, saffron and Kashmiri red chili powder) and a control solution (distilled water) in-vitro. The color change was assessed with the help of VITA Easyshade compact colorimeter based on Commission Internationale de I’, Eclairage L*a*b* color system. Values were then modified to NBS units for clinical relevance. Results. The hue of the transparent aligners was noticed to change in a statistically meaningful way when exposed to turmeric, saffron, Kashmiri red chili powder and coffee in decreasing order and mild color change in tea and green tea at both 12 hours and 24 hours intervals. Conclusion. Aligners are prone to color change when exposed to indigenous foods that contain staining properties.

Abstract: 

Color and appearance are among the first parameters perceived by consumers to judge the quality of foods. L*a*b* are used to report foods' colors quantitatively. In this study the use of digital imaging and Photoshop software was evaluated for measurement of L*, a* and b* color parameters. The results showed that L*, a*, and b* values from Hunter colorimeter and the digital imaging method had a good correlation with R2 more than 0.95, but the values from digital imaging method can be used only to monitor the trend of color changes and the actual numbers of digital imaging L*, a* and b* obtained by digital imaging do not have the same value as the L*, a* and b* given by a Hunter colorimeter. Using two equations for the three parameters the values obtained from digital imaging method can be successfully converted to Hunter Lab color corresponding parameters. The color change of Mazafati date during accelerated ripening using acetic acid solutions was monitored by the proposed method. L*, a*, and b* of the samples all decreased over the ripening.

Abstract: 

مقدمه: ندول تیرویید از جمله شکایات شایعی است که در بالین بیماران با آن برخورد می نماییم. بیوپسی سوزنی، اسکن رادیواکتیو و سونوگرافی از جمله روش هایی هستند که بیشتر برای تشخیص و تعیین رویکرد درمانی در یک ندول تیروییدی به کار گرفته می شوند در این میان سونوگرافی از جمله غیر مهاجم ترین و کم عارضه ترین روش های تصویربرداری است و در این تحقیق نیز به بررسی ارزش سونوگرافی و کالر داپلر در ندول های تیروییدی پرداخته ایم.روش کار: در این مطالعه 66 بیمار مبتلا به ندول تیرویید قابل لمس مراجعه کننده به کلینیک غدد بیمارستان امام رضا بین مرداد سال 83-82 که بیوپسی نیز برایشان انجام می شد انتخاب و در بخش رادیولوژی بیمارستان قائم تحت سونوگرافی و کالر داپلر قرار گرفتند و یافته ها با نتایج بیوپسی سوزنی و جراحی مطابقت گردید.نتایج: 8% از ندول های مورد بررسی بدخیم و 92% خوش خیم بوده اند. هوموژن بودن ندول تیرویید بیشتر مطرح کننده یک ضایعه خوش خیم است. احتمال بدخیمی در ندول منفرد بیشتر از ندول های متعدد است. در بررسی %91 Color Doppler ندول های خوش خیم و 75% ندول های بدخیم دارای واسکولاریزاسیون در اطراف ضایعه بوده اند. میزان واسکولاریزاسیون اینتراندولر در 30% ندول های بدخیم زیاد و در 60% موارد خیلی زیاد و این میزان ها در ندول های خوش خیم به ترتیب 12% و 6% بوده است. میانگین اندکس مقاومت (RI) در ندول های خوش خیم 0.62±0.12 و در ندول های بدخیم 0.68±0.11 بود و 28٪ از ندول های خوش خیم و 40% از ندول های بدخیم (RI) بیشتر از 0.75 داشتند. در مقایسه (RI) در ندول های خوش خیم و بدخیم مشاهده شد که (RI) بیش از 0.75 به طور معنی داری در بدخیمی ها بیشتر می باشد (P=0.045).

Abstract: 

Background: According to high prevalence of obesity and central adiposity in adolescents and its relevance with food intake, the aim of this research was to determine the relation between fast food consumption and body mass index (BMI) and waist circumference in female adolescents.Methods: This study was conducted on 140 students aged 10 to 14 years, selected randomly among guidance school students in an area of Isfahan. They completed the quantitative food frequency questionnaire. Physical activity was assessed by recording daily activities. BMI was categorized to lower than 15th percentile for age and sex, named "low weight", between 15th to 85th percentile named "normal weight", between 85th to 95th percentile "overweight" and equal or more than 95th percentile named "obese".Findings: The mean value of BMI and waist circumference was 19.8±3.3 kg/m2 and 69±9 cm. 35.7% of these adolescents were either obese or overweight. The daily mean value of fast food intake was 174.6 g. There was a significant relation among fast food consumption, BMI and waist circumference (P<0.05). Those in the highest quartile of fast food intake had higher BMI and waist circumference compared to those in the first quartile (P<0.001).Conclusion: There was a significant association between fast food consumption and BMI and waist circumference among Isfahan female adolescents. Nutritional education is needed in this regard.
